ARAYA × SEFINO FOUR HANDS DINNER
On March 13 (Friday) and 14 (Saturday), 2026, we will hold a two-night exclusive four-hands dinner event in collaboration with Chef Francisco Araya, the chef of "Araya," the only Michelin-starred Chilean restaurant in the world, and Agustin Balbi, who is in charge of the modern Mediterranean restaurant "Sefino" at our hotel.
In this event, the two chefs, rooted in globally acclaimed South American cuisine, will achieve a dream collaboration, co-creating a special course of 11 dishes inspired by seasonal ingredients from Japan, based on modern Chilean and modern Mediterranean cuisine.
On the day, we will present a special menu composed only for this occasion, incorporating Japanese ingredients such as kinmedai (golden eye snapper), scallops, Wagyu beef, and sweet shrimp, with an approach inspired by the culinary cultures of South America and the Mediterranean. The two chefs, with roots in South America, will reunite in Asia to express their culinary backgrounds and journeys in each dish.

Francisco Araya | Francisco Araya
Born near Santiago, Chile. Raised in a family that runs a restaurant, I learned from a young age that cooking connects people and cultures. I started my career at Alma in Chile and honed my skills at Mugaritz and elBulli in Spain.
After returning to my country, I deepened my understanding of native ingredients and terroir at Boragó, and in 2012 I opened '81' in Tokyo, earning one Michelin star.
Currently, I co-founded a Chilean restaurant 'Araya' in Singapore, pursuing dishes that convey the stories of the land.

Founded by Chilean chefs Francisco Araya and Fernanda Guerrero, the only Michelin-starred Chilean cuisine restaurant in Singapore.
Characterized by its dishes that reconstruct ingredients and traditional flavors derived from Chile's indigenous peoples using techniques honed in Japan and Europe.
Within 8 months of opening, it received a Michelin star and the Sommelier Award, and in 2026 was selected as one of 'The Coolest Restaurants as Chosen by Experts' by Forbes.
