Born in Argentina, Agustin Balbi is a globally acclaimed chef. Raised in a family whose roots trace back to the Mediterranean coast, I naturally developed an appreciation for seasonality, balance, and a deep reverence for ingredients. My cuisine brings together these traditional Mediterranean flavors and treasured heirloom recipes with modern sensibilities and personal memories.

Drawing from his cherished family memories, Balbi breathes life into every dish. The Balbi family's heirloom chimichurri, served alongside the meat course, is crafted from a treasured recipe passed down by his father. Accented with bay leaf, oregano, and a subtle touch of chili, it offers a rich depth of flavor. Another signature dish is "Arroz Caldoso," a comforting rice dish simmered in a rich, flavorful broth that was inspired by his grandmother's specialty.
