Agustin Balbi

Born in Argentina with South American and European roots, Agustin Balbi refined his craft in Japan and Hong Kong, where he developed a distinctive culinary philosophy that blends international sensibility with deeply personal expression.

At JW Marriott Hotel Tokyo, he oversees the modern Mediterranean restaurant "Sefino," presenting what he calls "Gourmet Emotional" cuisine — dishes inspired by childhood memories and shaped by refined technique.

Each plate is thoughtfully created to resonate with the heart: warm, evocative, and elegantly composed.

Sefino

Sefino is a coined name that weaves together three words:
sea (the ocean) + céfiro (a gentle breeze) + fino (refined).

Like the soft seasonal wind that heralds the arrival of spring across the Mediterranean — crossing the sea, connecting lands and people, and carrying nature's blessings — Sefino expresses a journey through the Mediterranean, told through cuisine and experience.

Beginning with a signature macerado cocktail, the dining experience unfolds in a unique and immersive way, creating a refined moment that resonates with the senses. This entire philosophy and world view are embodied in the name Sefino.
