    Sefino is a Mediterranean restaurant inspired by the rich culinary traditions of Southern Europe, spanning Spain, France, and Italy.

    The name "Sefino" is a poetic blend of the sea, céfiro (breeze), and fino (refinement), symbolizing a sophisticated dining experience like a journey guided by a soft Mediterranean breeze.  At the helm is Michelin-starred Chef Agustin Balbi. Born in Argentina, he was raised in a family whose ancestors crossed the ocean from Europe decades ago. Today, he creates dishes inspired by his Mediterranean heritage and shaped by the expertise he has gained in renowned kitchens around the world, where tradition and contemporary craftsmanship come together in harmony.

    Born in Argentina, Agustin Balbi is a globally acclaimed chef. He earned a Michelin star at his Hong Kong restaurant, Andō, and received the prestigious "Three Knives" award, the highest honor from The Best Chef Awards, further establishing his reputation on the international culinary stage. "Whenever I envision the perfect meal, it always brings me to my grandmother's kitchen. It was driven solely by a pure devotion to bringing joy to the others—the truest essence of hospitality.

    Raised in a family whose roots trace back to the Mediterranean coast, I naturally developed an appreciation for seasonality, balance, and a deep reverence for ingredients. My cuisine brings together these traditional Mediterranean flavors and treasured heirloom recipes with modern sensibilities and personal memories.

    "My aim is to share the true beauty of Japanese ingredients," says Chef Balbi. The bounty of the Japanese ocean lies at the very heart of his culinary philosophy. Sefino's cuisine is born from a vibrant cross-cultural dialogue between three culinary traditions: Japan, the Mediterranean, and Argentina. The leading role is played by fresh Japanese seafood, embraced by the light touch of Mediterranean olive oil, and enriched by layers of aroma—such as the smoke from a wood fire and the subtle nuance of Argentine spices. Together, they create a distinctive expression of modern Mediterranean cuisine.
